What to do:
Prepare the ingredients and the equipments needed.
For the Filling:
1 small pumpkin
2 tsp of cinnamon
1/2 tsp of ginger
1 tsp of cloves
145g maple syrup
3 eggs
150 ml evaporated milk
For the Pastry:
170g flour
1 tsp of salt
100g butter
2 tablespoon sugar
1 egg yolk
Equipments:
Mixing bowls and utensils
Food processor
Oven
Pastry case
Techniques:
Heat up oven to 200°C. Slice pumpkin in half. Remove the
seeds. Put it in a dish with some water. Roast for about 30 minutes.
Get it out and let it cool keeping the oven on. Remove the pumpkin
skin. Scoop and whizz the flesh with a Mixer until smooth.
For the pastry, put the flour and salt in a small bowl then put
the butter. Rub it until became bread crumbs and put some sugar. Mix the egg with
3 tbsp of water together. Mix over the flour mixture. With the knife, stir
until became a paste.
Roll out the mixture with your finger on the surface. Line
it to 21cm tart container. Then, let it cool down for half an hour.
After that, put 260g pumpkin puree in a big bowl and stir with
the maple syrup. Stir in the milk until creamy then put into the baking case.
Bake for 35 minutes, checking for 30 min. Let it cool for
one hour on a wire rack before serving.
